Ham and Potato Soup
OK, so I like bread bowls. I just needed to decide what to fill them with. It has to be thick and creamy like clam chowder but…I already did the clam chowder. So I did what I always do when I’m looking for something. Experiment! How can you go wrong making a soup that has two classic ingredients in it, ham and potatoes? You can’t! Ummm, by the way, this is NOT low calorie, sorry.
- 3 ½ cups Potatoes, peeled and diced
- 1/3 cup Onion, finely chopped
- 1/3 cup Celery, diced
- ½ Cup Ham cooked and diced.
- 3 ½ cups Water
- Salt and pepper
- 2 Chicken bouillon granules or 2 cups of
- Good chicken stock Reduce water by 2 cups.
- 5 tbsps. Butter
- 5 tbsps. Flour
- 2 cups milk
Step 1
Add potatoes, celery, onions, and diced ham to the water. Bring them to a boil. Simmer for 10-15 minutes until the potatoes are tender. Stir and add chicken bullion. Omit if using stock. Add salt and pepper to taste.
Melt butter in a saucepan. Whisk flour in and add milk, add to soup mixture Stir on low heat for 5 minutes or till mixture is thick. Serve with a sprinkle of Smoked Paprika on top if you like. I do!
