Farmer’s Market Fresh: Roasted Veggies!

I went to the farmer’s market today, and I went a little nuts. I always spend way too much money, but when I come home and eat that fresh deliciousness it makes it all worth it.

Roast vegetables are the easiest to make and all you need is a pan, olive oil, and kosher salt to taste. Bake at 425 for 45 minutes (stir them around once or twice so they don’t stick to the pan) and ta-daaa! This dish has baby and teenager carrots, beets with a red and white swirl inside, broccoli, sweet potatoes and yams.

What’s better is if you get organic, because you can be lazy and leave the skin on, and boom! extra fiber that keeps you full. You got your Vitamin C, Beta Carotene, Vitamin A, B Vitamins plus some minerals and stuff.
